Then comes the “Sapecado”, this is a very fast drying (lasts from 20 to 30 seconds) that must be done within 24 hours, after the harvest has been completed. After sapecado, the material must be subjected to a drying process to reduce its moisture content, to a value that ranges between 3% and 6%, which causes a decrease in its weight.
